Use the Food Network recipe below for perfect caramel apples to make the caramel. http://www.foodnetwork.com/recipes/food-network-kitchens/perfect-caramel-apples-recipe/index.html Caramel will keep for a very long time in the freezer (rewarm in microwave when needed) so I make a triple batch in a big dutch oven. On Silpat or parchment lined rimmed baking sheets lay out pretzel squares in blocks of 4 with an extra one in the center of each block. Warm the caramel in the microwave and stir until smooth. Holding a marshmallow by the very edge, dip in the caramel as far up as you can and then transfer to the center of a pretzel block. Repeat until all are done. If desired, toast the tops of the marshmallows with a kitchen torch. Put a bag of semi sweet chocolate chips in a gallon sized zipper bag and melt in microwave about 2 minutes on high until melted. Knead the bag until all chips are melted and smooth. Clip off a small corner of bag and pipe the chocolate out over the polo puffs in any decoration you like. Refrigerate until firm. Mmmmm
